An Interview with Chef Chris Tierney

Level 6: The Grove Reaches New Heights 

Nestled high above the tropical canopy of Coconut Grove, Level 6 literally elevates Miami’s  tapas and cocktail scene. This chic Spanish restaurant and lounge offers tapas and mixology in way that no other establishment in the Grove can brag about—outdoor seating with breathtaking 360° views of the Magic City and Biscayne Bay. Slaashh had the pleasure of interviewing Chef Chris Tierney of Level 6 to delve into the inspiration behind its delectable food and vibe, and what makes it a must-visit destination.

Level 6: A Cut Above the Rest

An homage to sixth floor upon which it is perched, diners experience  unparalleled Spanish gastronomy in an urban al fresco modern style with a Miami twist. The name Level 6 is a direct reflection of its location. “We wanted a name that signifies our vantage point,” Chef Tierney explains. Positioned above its acclaimed sister restaurant Amal just an elevator ride away, Level 6 offers stunning vistas of Biscayne Bay, creating an ambiance that makes this a destination dining experience that will take your out of town friends to new heights.

An Oasis The Grove Needed

Whether it’s a weekend brunch with your besties, a late afternoon glass of wine to meet a co-worker, or a sexy date night full of Seafood Paella and craft cocktails, Level 6 easily checks all those boxes.  Since opening in September 2022, Level 6 has quickly become a standout addition to the INK Entertainment Group’s portfolio of restaurants in Miami, joining the ranks of renowned venues like Byblos and Sofia and Amal just downstairs. “Coconut Grove is currently the exclusive home of Level 6,” Chef Tierney shares, emphasizing the restaurant’s unique identity within INK’s own assemblage of award winning restaurants as well as within Miami’s dynamic culinary landscape. Level 6 has taken its rightful place at one of trendsetting restaurants leading the Grove’s newest revival. With the cooler months now upon us, reservations to the rooftop may become scarce. 

Magic of the Grove: Views, Ambiance, and More

Level 6 is not just another Spanish restaurant; it’s a hidden gem springing up high atop tree lined Main Highway in suburban Coconut Grove.  Depending on your mood, you can come to eat, drink, socialize, or to just stare across Biscayne Bay’s aqua waters to the horizon where it meets a pink sky and setting orange sun while listen to the DJ spin curated music.  The rooftop oasis showcases panoramic views that mesmerize visitors, while the atmosphere is warm and inviting. “Whether you’re enjoying a laid-back afternoon with shareable bites or indulging in late-night cocktails and tapas, our elevated service ensures a memorable experience,” Tierney notes. 

Culinary Creations with an Urban Twist

At Level 6, Spanish cuisine is reimagined with an urban flair that encourages communal dining. “Our menu blends local ingredients with a Barcelona-style experience, infused with Miami’s spirit,” Chef Tierney explains. Signature dishes include a variety of croquettes—featuring hongos, salt cod, and jamón serrano—and the highly popular Paella de Mariscos, a sumptuous dish brimming with Spanish bomba rice, sofrito, Argentine shrimp, langoustine, and mussels.

The bar is just as vibrant, with a cocktail menu crafted by expert mixologists. Standouts include the Beso de Fuego, a delightful concoction of Don Julio Blanco tequila, passion fruit, lime, and jalapeño, and the refreshing Forbidden Fruit Sangria, which combines Olcavina Verdejo, lavender, lychee, lime, and prosecco. The extensive wine list features sparkling options, vintage champagnes, and unique varietals from emerging winemakers, ensuring that every palate is catered to.

Weekend Brunch: Starts at 11am Until?

Level 6 transforms into a brunch haven on weekends, welcoming guests on Saturdays from 11:00 AM to 3:00 PM and Sundays from 11:00 AM to 4:00 PM. Just because the Brunch may end does not mean the fund does. Brunch-goers can indulge in delightful offerings such as the Spanish Brioche French Toast with maple syrup and cinnamon sugar, or savor traditional Spanish omelets like the Tortilla Tradicional and Tortilla Jamon. To enhance the experience, diners can opt for bottomless Mimosas and Bellinis for just $35 per person during brunch service. When the sunny day progresses into the late afternoon, just slide into another round for to watch the sun go down.

A Magical Sunset Hour

One of the most enchanting experiences at Level 6 is the Sunset Hour, where guests can bask in stunning views as the sun dips below the horizon. Available Monday through Friday, the Sunset Hour menu features an array of flavorful tapas, including mushroom croquettes and Spanish charcuterie, paired with expertly crafted cocktails or wines by the glass. “There’s truly no better place to unwind and savor delicious bites while enjoying the sunset,” Chef Tierney reflects.

Turn Up the Volume: Late-Night Scene

As night falls, Level 6 transforms into lounge mode.  You may notice a transition from families to a bit more adventurous crowd. “We invite you to join us for a vibrant late-night atmosphere, complete with a DJ spinning energetic beats,” Tierney says. Level six stays open Thursday-Saturday as late as 2 AM. Another value add to the Grove’s sophistication brought to you by Level 6, is that on those nights, the kitchen stays open with a late-night menu featuring a selection of tapas perfect for night owls looking for a late-night snack. With mood setting dd lighting and an energetic vibe pumping not too loud in the background, Level 6 offers an hip ambiance for an exciting night out in Miami.

Celebrating Special Moments

Level 6 is also an ideal venue for private events. “We welcome a variety of gatherings, from birthdays to corporate events,” Chef Tierney explains. The stunning rooftop space provides a picturesque setting for unforgettable celebrations, complete with customizable menus that range from passed canapés to prix fixe options, all served family-style to foster connection among guests.

Exciting Updates

Looking to the future, Level 6 has some thrilling events lined up. “We’re hosting Nightmare on Level 6, a Halloween party on October 31st, transforming the rooftop into an eerie elevated space,” Tierney reveals. Attendees can enjoy a live DJ, specialty cocktails, and even compete in a costume contest for a chance to win a special prize. Additionally, the restaurant wants Slasshh to remind Miami it offers bottomless brunch every Saturday and Sunday.
